Campari competition cocktails

Embrace the Bitterness is a collaboration between international bar consultants Liquid Management and Swedish wine/spirits imorter Nigab – and the aim is to increase the knowledge about and use of bitters/amari in Sweden. They’ve had a number of workshops throughout the country, and also two cocktail competitions on their Facebook page – open to both professionals and home mixologists. The first one, “The Challenge”, took place last summer and the only rule was to use a minimum of 15 ml Campari in the drink. To my surprise, when the jury announced the winner in September it was none other than me! The winning recipe can be found here.

Last week, it was the deadline for their latest competition, and this time you were supposed to twist a well known classic cocktail by using a minimum of 15 ml Campari. I did a few experiments with Eastern Sour and Bloody Mary, but failed miserably. In the end, I managed to make a really nice (in my opinion, at least) tweak of one of my favourite drinks – Ramos Gin Fizz – and here’s how to make it:

Tepes Gin Fizz
45 ml Hayman’s Old Tom Gin
15 ml Campari
15 ml simple syrup (1:1)
30 ml heavy cream
30 ml fresh blood orange juice
30 ml egg white
60 ml club soda
3 drops orange flower water

Pour all ingredients, except for the club soda, into a shaker without ice and shake like a maniac. Add ice cubes and shake until you can’t take it anymore. Strain into a highball glass – no ice – top with the club soda and garnish with a blood orange wheel.

The winner of the competition hasn’t been announced yet, but I don’t think I’ll be able to win two times in a row. However, stranger things have happened, so fingers crossed!
